Ok so I have the southern fried chicken…now i need SIDES!?

I asked and got some great southern fried chicken recipe….now I need some great southern sides..Like cheese grits maybe. The only think is the person who I am cooking for does not like collard greens..or any greens really!

Mashed potatoes and gravy or potato salad. Corn on the cob. Fried Okra. I’ll give you a Cheesy Grits recipe below… Really anything goes with fried chicken… So don’t be hesitant about it…

I’m not big on collards either… We just always had fried chicken, mashed potatoes and gravy, (potato salad if it was a picnic.) and anything else that someone might want to bring… Pecan pie or apple or cherry pie for desert.

INGREDIENTS

* 6 cups water
* 1 1/2 cups quick-cooking grits, dry
* 3/4 cup butter
* 1 pound processed cheese, cubed
* 2 teaspoons seasoning salt
* 1 tablespoon Worcestershire sauce
* 1/2 teaspoon hot pepper sauce
* 2 teaspoons salt
* 3 eggs, beaten

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
2. In a medium saucepan, bring the water to a boil. Stir in grits, and reduce heat to low. Cover, and cook 5 to 6 minutes, stirring occasionally. Mix in the butter, cheese, seasoning salt, Worcestershire sauce, hot pepper sauce, and salt. Continue cooking for 5 minutes, or until the cheese is melted. Remove from heat, cool slightly, and fold in the eggs. Pour into the prepared baking dish.
3. Bake 1 hour in the preheated oven, or until the top is lightly browned.

Southern Style Cooking?

My very long term boyfriend and I are having our first ever thanksgiving at our home. His grandmother usually does it ever year but she passed away a couple of months ago. Allot of his family is originally from down south so I was wondering if anyone has a couple of good down south recipes for collard greens and or yams or anything else? I just know it is going to be difficult for everyone the first holiday without their grandmother and somewhere new I am trying to do what ever I can to help ease the situation Thank you in advance.

Southern Greens
* 1 cup chopped onion
* 1/4 cup vegetable oil
* 1 or 2 jalapeno or serrano chile peppers, seeded and minced, optional
* 1 smoked turkey leg, smoked pork chops, or ham hock
* seasoned salt and ground black pepper or seasoned pepper

Preparation:
Tear the greens into large pieces. Wash the greens well in a sink full of cold water, lifting greens out and letting grit stay on bottom of sink. Drain sink, change water and wash again; repeat washings until there is no grit on the greens. Cut away tough stems; roll large leaves and cut in strips or chop.

In a large kettle, combine the chopped onions, 2 cups water, oil, and chile pepper, if using. Bring to a boil over high heat. Gradually stir in the greens, allowing each batch to wilt before adding more geens. Put turkey leg or smoked meat in greens. Season with salt and pepper to taste. Cover and reduce the heat to medium-low. Cook, stirring occasionally, for about 45 minutes to 1 hour, to your taste. Remove meat from bone; chop and return to pot. Using a slotted spoon, transfer the greens to a serving dish; serve hot.
Serve with cornbread.

Turnip greens with or without the turnips, red beans & rice with sausage and/or ham hocks, fried pork chops, mashed potatoes & gravy or potato salad, smothered okra & tomatoes, squash dressing, rice dressing or dirty rice, cornbread, home made biscuits, fresh sliced tomatoes & cucumber, deviled eggs, pie, home made ice cream, banana pudding, watermelon…..
